Baked Buttermilk Chicken

Another Pinterest inspired creation. I really enjoyed finding this recipe. It contains ingredients that I normally have on hand anyway. A nice way to clear out the pantry.

Baked Buttermilk Chicken

Baked Buttermilk Chicken


  • 1 1/2 cups buttermilk (I make my own, it's super simple. Click here to make your own too!)
  • 1/4 cup butter
  • 4 boneless, skinless chicken breast
  • 1/4 cup flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 1 (10 oz) can cream of mushroom soup
  • 1 tbsp dried parsley


  1. Preheat oven to 425F.
  2. Melt butter in a 9x13 inch pan.
  3. Place 1/2 cup buttermilk in shallow dish. Set aside the rest.
  4. In another shallow dish, mix together flour, salt, and peppers.
  5. Dip chicken in buttermilk.
  6. Then dredge chicken in flour mixture and placed in 9x13 buttered pan.
  7. Bake uncovered for 30 minutes.
  8. Turn chicken over and bake 15 minutes.
  9. Mix remaining buttermilk with cream of mushroom soup.
  10. Pour over chicken and bake 15 more minutes.
  11. Transfer chicken to serving platter and garnish with parsley.
  12. Stir gravy really well and transfer to a gravy dish.
  13. Serve chicken topped with gravy. (The recipe provider also recommends a side of mashed potatoes.)

Another simple dish. Love simple dishes. They compensate for my lack of cooking abilities. I enjoyed it and the baby enjoyed it. I never did get any feedback from Mr. H, but I’m guessing he liked it enough because he finished it.

Pros: Simple. Tasty. Lots of ingredients commonly found in the pantry.

Cons: The cooking time was a bit too long. I used my judgement and didn’t cook it the last 15 minutes according to recipe. I left that out and put the gravy over the chicken after flipping it over. It still turned out well. So, my only bad thing to say about this is that you need to use your own judgement based on the thickness of your chicken breasts for cooking.

Verdict: Oh, I’ll definitely make this again. It had a nice little kick and I’m a sucker for gravy.
