Baked Macaroni and Cheese

Macaroni and Cheese has always been one of my favorite foods. I grew up eating it out of the beautiful blue box just like most people my age. I’ve eaten several different kinds of boxed mac n cheese and many different homemade varieties as well. All shapes and sizes, can’t stop me from eating it. My little one has inherited that from me because daddy prefers not to eat things like mac n cheese.

I have searched through more recipes than I care to count to be able to make my own good mac n cheese. There are several fancy-pants recipes out there using all kinds of fancy cheeses. I’m not looking for super fancy. After all, I learned to love mac n cheese from the glorious blue box in the grocery store. But alas, I found a simple enough one to try out from my Pinterest boards.

Baked Macaroni and Cheese


  • 1 1/2 cups elbow macaroni, shells, or cavatappi
  • 3 tbsp butter or margarine
  • 3 tbsp all-purpose flour
  • 2 cups milk (not skim)
  • 1/2 tsp each salt and pepper
  • 2 cups shredded cheese (I used sharp cheddar)


  1. Preheat oven to 350F.
  2. Bring a pot of water to a boil. Season generously with salt.
  3. Cook pasta till just before done.
  4. While pasta cooks, melt butter in a pan large enough to hold noodles after they are cooked.
  5. Add flour to butter and stir till lightly browned, 1-2 minutes.
  6. Add milk and whisk to remove any lumps.
  7. Add salt and pepper.
  8. Stir in cheese and cook until smooth and melted.
  9. When pasta is cooked but still firm, drain and add to sauce. Mix well.
  10. Pour pasta into a greased 2-quart dish (or an 8x8 pan.)
  11. Bake 40-45 minutes until brown and bubbly.

This turned out well and was simple enough to make. The little guy and I ate it all. Daddy was not impressed and said it tasted pretty bland.

Pros: Simple. Easy to make. Looked and tasted like macaroni and cheese.

Cons: Not cheesy enough. Could probably use a little more salt.

Verdict: I probably won’t be making this again. My search for my perfect macaroni and cheese is still going strong!
