Banana Split Bites

A couple months back, I decided to try something new for dessert, banana split bites. I read that these were simple and great for a small portion dessert.

  • Firm bananas (I only used one for this)
  • Chocolate chips
  • Ice cream (I used vanilla)
  • Sprinkles, coconut, nuts, etc (whatever tiny topping you like to use)
  • Whip cream (mine was from a can)
  • Maraschino cherries


  1. Cut banana into fourths. (leave the peel on for easier handling... I didn't do this, big mistake)
  2. Scoop out the middle to create a little well. (the recipe I followed says to use a melon baller, but I found it was too big to do the job)
  3. Melt chocolate. (just zap it in the microwave in small increments until melted)
  4. Peel bananas and dip the solid end in the chocolate.
  5. Dip in other topping of choice. (sprinkles, coconut, nuts, etc.)
  6. Place in freezer for five minutes to harden chocolate.
  7. Scoop ice cream into the well in the banana.
  8. Top with whip cream.
  9. Add a cherry.
  10. Shove in mouth and enjoy!

These were extremely tasty. I am not a banana fan, but I did love these. They were small enough to eat in one bite. And two of them were more than enough to be a satisfying dessert. Next time I’ll remember to leave the peel on the banana long enough. I think I’ll toast the coconut too. And perhaps I’ll get some nuts to crush and use for coating as well. Also, I’ll probably do this without a melon baller and just use a knife like I ended up having to do. Yes, I’ll make these again one day.
