Easy Extra Creamy Mac and Cheese

Macaroni and Cheese… yum! Can we just pause for a moment and drool over a bowl of our favorite mac and cheese? Are you hungry now? Licking your lips, ready for a big serving of cheesy, gooey pasta? Me too! But I love mac and cheese so much that I pretty much want and crave it all the time. I get a little timid when it comes to trying recipes for a homemade version, but this Easy Extra Creamy Mac and Cheese seemed just simple enough for me to try.

Cook and drain noodles.  Add back to warm pot, stir in butter, cheese soup, and half the can of evaporated milk.  Stir until combined.  Add 1 cup of cheese to start with, add more until desired cheesiness. Keep the burner on low to help melt things together.  If it gets too thick, add some reserve evaporated milk to thin down Add salt and pepper to taste

I’ve been relying too much on the blue box or those little easy mac bowls to get my child just to eat something! I don’t blame him, though, mac and cheese is one of my favorite foods, enough to be its own food group in my life. That’s probably one of the reasons he loves it.

We haven’t eaten macaroni and cheese in quite a while, maybe once in the last month. That is not very much for us compared to once or twice a week. I had this recipe saved on Pinterest and was happy to read over it again, especially with how little time it took to make this recipe.

I’m glad I took the chance to make it. It was a pleasant experience and it satisfied my need for mac and cheese very quickly. Surprisingly, everyone in the family did eventually end up trying this. Mr. H felt it was missing something although he couldn’t figure out what exactly. I felt the same although I may try to blend some different cheeses instead of only using cheddar. It took a few tries but the baby did eventually eat the mac and cheese. At first he only licked the cheese sauce off my shells and pushed the shells back to me. I was surprised he ate them at all as he’s never had mac and cheese in the shell form.

Overall, this was a good recipe although I think it does need some tweaking. I plan to revisit this another day and see if I can get it exactly where I want it.

Ingredients

  • 16oz box pasta (shells, macaroni, bow tie)
  • 4 tbsp butter
  • 1 can cheddar cheese soup
  • 1 can evaporated milk (12 oz)
  • 1-2 cups grated cheddar cheese
  • Salt and pepper to taste
