I say a lot that I don’t normally eat or cook pork (except bacon.) However, I keep bringing in pork recipes like I eat pork all the time. I do enjoy pork, a lot, especially when it’s cooked well. After eating a good pork meal, I want to eat it more. This Pork Chops and Scalloped Potatoes Casserole is worth a try on your menu.
Meat and potatoes. Pretty standard food. Usually when I think of meat and potatoes, I think of steak and a baked potato. But this dish stood up really well. I really enjoyed eating this. However, the other two members of my household did not enjoy this.
Mr. H said it tasted weird and wouldn’t eat it. I never excepted C-Man to try it anyway. And for whatever reason, I really enjoyed this dish. The sauce was creamy and rich. It coated the pork chops well. The potatoes softened and I just wanted to shove them in my mouth, more and more and more.
I was surprised that I was the only one to enjoy the dish. I’m not sure why Mr. H thought it tasted weird especially after I enjoyed it so much. So I guess this will not go on my menu again as I’m the only one who liked it. But I’m still going to search for more pork dishes, especially ones like this that don’t taste weird.
Some of the comments on the original recipe had me a little worried. They complained about watery potatoes and such. I didn’t find this a problem. My recipe didn’t turn out watery at all. I found it to be the perfect consistency.
