Recipe: Instant Pot Chili Lime Beef

I made a promise to myself this year that I would no longer post recipes that I didn’t like. I would simply let them disappear back into the void and move on to find better things.Well, needless to say, it’s taking me longer to find recipes worth posting! But I have found one that I think everyone should know about, especially if you are following a low-carb or keto diet. It is Instant Pot Chili Lime Beef.

I bought this tough cut of beef at Aldi on a whim because it was discounted. (I bought two pounds worth and used the first half in a beef stew.) So searched for another way to use it that wasn’t just another stew. This recipe jumped to the top of my list of things to make.

I made some changes!

Now, the original recipe calls for the beef to be served over a bowl of diced avocado. No thank you. I really dislike avocado so I opted to turn it into a salad, which was incredibly delicious!

Chili Lime Beef

The beef turned out surprisingly tender, despite my choice of a tough cut of beef. The flavor was outstanding and definitely gave me the feeling of eating a nice takeout feast right from my own kitchen.

Should you try it?

If you are low-carb or keto and have an instant pot, you NEED to try this recipe. It’s absolutely worth it!

Recipe: Instant Pot Chili Lime Beef

Yield: 4

Recipe: Instant Pot Chili Lime Beef

Ingredients

  • 1-2 lbs of Fajita Steak Strips, cut into cubes (or another tough cut of beef also cut into cubes)
  • 1 tbsp Water
  • 1 tsp minced Garlic
  • 1 tbsp Oil
  • 2 tsp Lime Juice
  • 1/2 tsp Chili Powder
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Cholula
  • 1 Bell Pepper, sliced into strips optional
  • 1 small Onion, sliced into strips optional

Instructions

  1. Turn on Instant Pot saute function.
  2. Add oil, heat till hot.
  3. Add garlic (and bell pepper and onion if using) and cook till golden.
  4. Add remaining ingredients and mix well.
  5. Place the lid on instant pot.
  6. Switch to manual high pressure for 10 minutes. (sealed)
  7. Use a quick pressure release.
  8. Remove lid after pressure is released.
  9. Switch back to saute mode.
  10. Stir meat to break it apart.
  11. Cook until liquid reduces by half.
  12. Allow to cool some before serving. (Although I did serve mine still warm on the salad.)

  1. While I don’t have an Instant Pot, I’m sure that I could slow cook this similarly. It looks so good. I’ve finally had the time to read through your many posts. Yum on all your food lists, favorite foods, and menus. I’m still straggling behind in life, but I need to slowly and take one day at a time.

    1. I bet it would turn out great in the slow cooker too! Plus it would make your house smell amazing all day long!
