I made a promise to myself this year that I would no longer post recipes that I didn’t like. I would simply let them disappear back into the void and move on to find better things.Well, needless to say, it’s taking me longer to find recipes worth posting! But I have found one that I think everyone should know about, especially if you are following a low-carb or keto diet. It is Instant Pot Chili Lime Beef.
I bought this tough cut of beef at Aldi on a whim because it was discounted. (I bought two pounds worth and used the first half in a beef stew.) So searched for another way to use it that wasn’t just another stew. This recipe jumped to the top of my list of things to make.
I made some changes!
Now, the original recipe calls for the beef to be served over a bowl of diced avocado. No thank you. I really dislike avocado so I opted to turn it into a salad, which was incredibly delicious!
The beef turned out surprisingly tender, despite my choice of a tough cut of beef. The flavor was outstanding and definitely gave me the feeling of eating a nice takeout feast right from my own kitchen.
