Recipe: Johnny Machete Remix

The most popular page on my site is for a version of Johnny Machete. You may have heard of this dish from the very popular show Gilmore Girls (also a favorite of mine.) I love making Johnny Machete and love eating it. It also makes me very happy that I get so many people visiting my site to check out the recipe.

After hitting up the grocery store today, I decided I wanted to make Johnny Machete. (It is on my meal plan after all.) But I realized I forgot a couple of ingredients that normally go in the dish. So I decided to mix things up and create this Johnny Machete Remix.

I exchanged the ground beef for ground turkey, hello huge money saver! Celery was replaced with zucchini because I just plain forgot to buy celery, oops! And I also forgot to get mozzarella cheese and just used extra cheddar.

Honestly, I didn’t miss any of the changes. Yes, even the beef. I honestly couldn’t tell that I had used turkey instead of beef. It still tasted great, still tasted like Johnny Machete. Now I am considering just mixing it up every time I make this dish and experimenting with the vegetables and cheese combinations just to spice it up.

  • 16 oz. uncooked pasta ( I used elbow macaroni for this )
  • 1 tbsp. Olive Oil
  • 1 tbsp. Butter
  • 5 oz. Mushrooms, sliced (or diced)
  • 1 lb. Ground Turkey
  • 1 small Onion, finely diced
  • 1 small-medium Zucchini, sliced and roughly chopped
  • 1 green bell pepper, diced
  • 10 oz. can Condensed Tomato Soup
  • 10 oz. can Cream of Mushroom Soup
  • 1 to 1.5 cup Shredded Cheddar Cheese


  1. Cook pasta according to package directions minus two minutes. (It will finish in the oven.)
  2. Preheat oven to 375F.
  3. Heat butter and oil in skillet over medium heat.
  4. Add mushrooms and cook 3-4 minutes.
  5. Remove mushrooms.
  6. Add ground turkey to pan.
  7. Half way through browning turkey, add onions, peppers, and zucchini.
  8. Saute until turkey is cooked through and vegetables start to get tender.
  9. Add mushrooms back to pan, cook additional minute.
  10. Mix pasta, meat mixture, tomato soup, cream of mushroom soup, and half of cheese in large mixing bowl.
  11. Pour mixture into baking dish.
  12. Cover with remaining cheese.
  13. Bake for 30 minutes.

  1. While the wife was sick, we were watching GG reruns and saw where Richard had made the dish. I was looking it up and found myself on your cozy site. I made a few changes outs, some spur of the moment (used turkey and chicken sweet italian sausage and random veggies). The dish came our great, and we will make ot again. Nice site, thanks!

    1. Glad you enjoyed it! One of my favorite things about this dish is being able to substitute the ingredients without losing the same basic flavor or any of the comfort value. Hope your wife is feeling better.
